A cup of butter, a pinch of salt, three teaspoons of vanilla extract; baking is a science and every step is crucial—especially when making the classic chocolate chip cookie. Led by R2L’s pastry chef Peter Scarola and The Franklin Institute’s resident food scientist, Shanna Caster, attendees are able to enter the Cookie Lab to bake, dissect, and taste how one little recipe adjustment can make a big difference to the quality of a cookie! The Free Library of Philadelphia’s Culinary Literacy Center serves as the Cookie Lab as we explore—and taste—the science of baking.

    Peter Scarola
    Peter Scarola
    Peter Scarola is the Executive Pastry Chef at R2L restaurant. He earned his Bachelor's in Food Service Management from Johnson and Wales University. His interests include baking, pastry making, and chocolate. Peter reveals that the most interesting place that he has been for his work is to cocoa plantations of Peru. .

    Shanna Caster
    Shanna Caster is the Public Programs Manager at The Franklin Institute. She received her Bachelor of Science in Chemistry from Pennsylvania State University. Her interests include chemistry and kitchen science. Shanna’s team is in charge of blowing stuff up for educational purposes. And for fun.
